Baking with Tay: Tiramisu Cupcakes

My boyfriend’s birthday was yesterday (December 17) and I wanted to make him something special…since it was his 25th birthday! He really loves two things: tiramisu and strawberry shortcake. I’ve never made him tiramisu, so I decided to go with that…except I turned it into cupcakes. I found a great recipe on Pinterest and wanted to share it with you all!

Ingredients
Cupcakes:
  • All-purpose flour
  • Baking powder
  • Espresso powder or instant coffee powder
  • Salt
  • Butter, softened
  • Granulated sugar
  • Brown sugar (or granulated sugar)
  • Large eggs, at room temperature
  • Pure vanilla extract
  • Whole milk
Coffee Soaking Syrup:
  • Hot water
  • Espresso powder or instant coffee powder*
  • Sugar
  • Marsala or coffee liqueur such as Kahlua, optional but so good!
Frosting:
  • Mascarpone cheese
  • Confectioner’s sugar, sifted
  • Espresso powder or instant coffee powder*
  • Coffee liqueur
  • Heavy cream
  • Cocoa powder, for dusting

Sorry these photos are not the best…I’m still working on my food photography! They’ll get better the more I practice, so don’t worry. Hope you make these cupcakes and enjoy them as much as my boyfriend did! Also, there will definitely be more baking posts in the future!
